La gastronomie bordelaise se tourne autant vers la mer que vers la terre, c’est là un reflet de la vision à 360° qu’a su entretenir la ville avec son territoire tout au long de son Histoire sous le signe du vin, le symbole et produit-phare du Bordelais, qui trône autant sur les tables que dans les assiettes au détour d’une sauce ou d’une marinade.
En tant que ville-port, Bordeaux offre évidemment une foule de merveilles gastronomiques côté mer.
Véritable richesse culinaire, l’estuaire de la gironde regorge de poissons migrateurs qui viennent y frayer. Depuis toujours, ils font le régal des familles bordelaises qui ont su les accommoder pour en faire des plats typiquement régionaux. Ces célèbres poissons sont à l’origine même de l’attachement du terroir bordelais à son fleuve et à sa culture gastronomique.

These famous fish are one of the main reasons for Bordeaux’s strong love for its river and food culture in general.
