Obviously "lush" would not be the term here! Voluptuous and fullbodied come to mind also.

The only refreence I have is 23 years of living close to the California wine country.

not heavy on the palate [or maybe soft]

Here's a whole variety of "gum" experiences. Somewhere among them, there may be an equivalent to our "chewy", but I think we speak more of palate than gums.

not over-luscious on the palate

I think "luscious" is as close as you can get to "ueppig" in this context. As it's generally a positive term, I've put "over-" in front of it. The net effect is suitably pretentious, as wine writing should be.
